So For this Post we are Focusing on the Second Recipe

If you read our first portion of the review I completed the first recipe. 
Chicken Schnitzel Sandwiches
 Gruyere and TAngy Red Cabbage Slaw
Traditional schnitzel involves breaded veal. In an effort to be more nature friendly they’ve opted for chicken in their own take on schnitzel

2 Chicken Breast




Red Cabbage Shredded



Pumpernickel Bread

Red Wine Vinegar

This was the simplest recipe to make. And I think this was my favorite as well!
First you make your cabbage slaw, and preheat your oven to 400. 
I love shallots!

Halve, peel and thinly slice your shalot.

Now toss together the cabbage, shallot, red wine vinegar, and a drizzle of olive oil. Season with salt and pepper.

Next, we butterfly our chicken breasts. Once you’ve done this you spread one tablespoon of Mayonnaise on each breast. Season the chicken on all sides with salt and pepper
Now, we are going to dredge the chicken. Using the flour, salt, pepper, and Cayenne to taste we place the chicken breasts (one at a time) in the mixture. Coat thoroughly on both sides. Continue until both are coated. 
Now cook your chicken. Heat oil in the bottom of a pan and once it’s hot add the chicken. Cook three to four minutes per side and until dark, golden brown and cooked through. Remove from pan and let rest three to five minutes
Now get to toasting! Place in the oven for three to five minutes. Add the cheese during the last two minutes.


Use the remaining mayonnaise to spread on toasts without cheese. Top with chicken, a bit of the slaw, and the other slice of toast. Slice sandwiches and serve with remaining slaw!


So in summary…

This was my favorite of the three recipes so far. I liked the tanginess of the salad and that while the sandwich was healthy it was also filling and tasty. I loved the Gruyere cheese as well and this recipe seemed a little simpler than the first that we tried.
