So what is all this stuff?

Our recipe. Everything we need to do to create these pretty little cakes in six steps or less

Chocolate Bits

Vegan chocolate bits to create our yummy ganache
Hazelnuts

Hazelnuts are the key ingredient in this recipe… so of course they’re included
Coconut Oil

Our coconut oil came in two sizes. One small size for the ganache and another larger size for the cakes

We love that almost everything is pre-portioned. So all we have to do is add it in

We received maple syrup in two sizes as well. One for both the ganache and another for the cakes

Flour Blend

This flour blend is gluten free!

Because baking requires salt. Ours came in this adorable tiny envelope… love it!

Organic Coconut Cream

Because extra flavor never hurts!
Okay, so now what?

Well, first we grease our cupcake tin and prep
We familiarized ourselves with the recipe as well.

This was simple enough for even a novice baker (us)
We preheat the oven to 350 and get our hazelnuts ready to toast


We left them in for about 10 minutes and then pulled them out once they had a nice crispy golden color

Then we crush them and put two tablespoons aside for our ganache.
Next we add in our baking blend and our sea salt and flour


Once all of our “dry” ingredients are combined

We combine the “wet ingredients”- the coconut oil (large container) and maple syrup (large container) vanilla extract and the coconut milk (reserve one tablespoon for ganache)

Once we’ve added them all we stir it all up and then add it into the dry ingredients

Whisk the dry and wet ingredients together and then pour into the muffin tins

Fill them to about 2/3rds full

Bake at 350 and start checking for doneness around 16 minutes

Now we move on to the ganache, which was super simple

Combine cocoa bits and coconut oil and microwave in 30 second increments until fully melted

Then stir in your coconut milk and maple syrup and continue stirring until the ganache cools and voila!

Once you’ve taken your hazelnut cakes from the oven let them cool in the pan for about five minutes

Then let them cool on the baking rack before applying the ganache

Then ganache and sprinkle it up! Go crazy!

So in summary
Cake in a Crate is a great way to expose ourselves to clean eating and cooking and also different resources for clean eating. We love the healthy alternatives they offer to regular store bought desserts and the attention to detail with the pre-portioned ingredients. The recipe was at once simple and manageable but also delicious and left us with a wonderful treat that we feel good sharing with our children. Cake in a Crate has so many different options on their site (in case you are cuh-razy and don’t like hazelnuts). There’s Caramel Apple Spice Cake, Chocolate Silk Pie, Lou’s Chocolate Cake, Two Kinds of Cheesecake, Sweet Vanilla Lavender (we love florals so this looks incredibly enticing) so there is something for everyone!
