first look in the figberry box
Our first glimpse inside the Figberry Subscription Box. We can see immediately that we are making Apple Cinnamon Energy Bites! Very seasonal!

So what is all this stuff?

Our box inserts that included a handwritten note from the gals curating the box, our recipe and some interesting food facts. For instance, did you know that the average American eats more than 44 pounds of apples a year?
Our recipe is simple and to the point. We love the simplicity of the recipes and the fact that we are using less than ten ingredients and no knives or stoves!
Yummy pecans. Little food fact – pecans have more antioxidants than any other nut!
The dates are what will bind our energy bites together!
What energy bite would be complete without some oats!
Dried Apples
Do you know how hard it was to abstain from eating these? Pretty hard! Yummy dehydrated apples will add a delicious pop of flavor to our bites!
Spice Mix
Cinnamon, nutmeg, ginger, cloves and salt comprised this aromatic blend!

Okay so now what?

Our first step is to soak our dates for ten minutes and then pit them. We did this prior to the kids coming in the kitchen to help.
Since we do not have a food processor (minimalism baby) we used our hand chopper. This makes it a little more difficult but dang we got an arm workout! First we combine our pecans and oats and chop until no large pieces remain
We all took turns chop, chop, chopping away!
Add in your dates, spice mix and apples. We had to chop ours up a bit first before we could “process” them.
Once you have a sticky paste, roll the dough into 1″ balls
Refrigerate until ready to serve! Our energy bites look a little grainy – the consistency with a food processor would be much more smooth. Either way these bites were scrumptious!

So in summary

We look for three things in a subscription box; quality, curation, and presentation. The Figberry Box is a great concept and we love that each month brings a new flavor to experience with your child. We also love their commitment to plant based food and that they include absolutely NO refined sugars! The presentation is great- everything was packaged well and arrived exactly as it should have. The quality was good! All of the foods were yummy. Curation is excellent. We love that they include everything and that we can share this experience with our daughters. It really is so much more than a gift – it’s a great shared experience.
