Everything that we received in our March “Lebanese / Mediterranean” inspired Piquant Post
So what is all this stuff?
Our first recipe is Lebanese Moussaka (not the Greek variety). This is a cold vegetable stew and contains lots of tasty vegetables like eggplant
The spicy mint blend used in this recipe includes; spearmint, smoked paprika, cayenne, cumin, and coriander
Baharat is a blend of many spices… like the Arab cuisine… it’s been influenced by the flavors of East Asia, Africa as well as Europe. It can be slightly different from dish to dish but at it’s core it remains relatively the same
Our Baharat ( 7 Spice) includes; black pepper, allspice, coriander, cumin, cinnamon cloves, nutmeg, and smoked paprika (Mr. Not a Tree’s favorite)
This is an unusual inclusion in this package, a dessert recipe! Rosewater is in many Lebanese recipes and so … in this recipe we’ll be replicating the flavor at home (without having to buy pricey rosewater). If you read this blog or watch our Youtube channel you know that we love florals and in particular rose. So we are excited for this one!
This blend includes just Provence Rose petals. These are edible flowers – and while they are bitter when boiled … the ice cream and honey or agave sweetens them up quite a bit!
Zaatar is a very versatile spice blend used throughout Lebanon. The 3 main ingredients that are included in most all variations are – Thyme, Sumac (a personal fave) and Marjoram.
Our blend from Piquant Post didn’t include just Thyme, Marjoram and Sumac but also Oregano and Sesame Seeds for an extra nutty, herbal flavor! They had us at Sumac! This is the recipe we’re making this month!
Okay so now what?!
Now we cook!
First thing’s first, we thaw, skin and salt and pepper our chicken
Next we create a marinade by mixing together olive oil and the Zaatar spices.
Then we add in 4 cloves of garlic
Add chicken and toss to marinate
Bake in an oven dish at 400 degrees (yes, we totally cook our skin on the side… because it’s delicious)
Here’s our finished chicken. You are supposed to top this with a lemon wedge and pomegranate seeds.. but it was so good it didn’t even matter. This was … absolutely phenomenal! We’ll definitely be using Zaatar spices in the future!
So in summary
We look for three things in a subscription box; quality, curation, and presentation. The Piquant Post package gives us all the spices we need to cook up 4 delicious dinners and a whole lot of imagination to boot! The presentation is great, everything arrives perfectly. The quality is fantastic. Each spice is hand made in small batches to ensure quality as well as flavor. And curation – is so amazing. Each of these dishes really delves into the Lebanese diet and gives us original flavors used in the region. We are pumped that both rose and sumac were included – super tasty!
